Cheesy Acorn Squash
1 Acorn squash
1 Pear diced
N&K Cranberry Pecan goat cheese - about 4oz.
Preheat oven to 370 F.
Cut off the ends of the squash, scoop the seeds out and drizzle with maple syrup.
Place it on a baking sheet up side down and bake for half an hour or until insides are tender and outside is hard.
In the mean time, in a bowl, mix goat cheese with 1-2tsp of milk and whisk until the combined and creamy.
Add the diced pear into the bowl with the goat cheese and milk; you can add a dash of cinnamon into the mix or on top if you desire.
Stuff the acorn squash. You can have a healthy dessert or fun in between meal.
