Broccoli Spring Rolls

4 cups frozen broccoli florets
1/2 cup finely diced onions
2 tbsp cream cheese
2 tbsp shredded Natural and Kosher Cheddar or Mozzarella cheese
1/2 tsp kosher salt
pinch coarse black pepper
8-10 spring roll wrappers
oil, for frying

Chop broccoli very finely. Once thawed and chopped, the broccoli should yield 2 cups.

In a small bowl, combine broccoli, onions, cream cheese, shredded cheese, salt, and pepper.

Place a spring roll wrapper on your work surface. Place approximately 2 tablespoons filling accross the center of the wrapper. Fold in the two sides, then fold the bottom half of the wrapper over the filling. Roll up to completely enclose. Use the water to seal if necessary. Spring rolls can be frozen at this point.

Heat oil in a saucepan. Add spring rolls and fry until golden, about 3-4 minutes per side. Alternatively, spring rolls can be bakes at 425F for 18 minutes until crispy.
